Dried porcini 20g Simon Johnson
Use in risotto and pasta. To prepare dried porcini steep them in just enough boiling water to cover for 20 minutes or until they've expanded. Drain them, reserving the liquid and chop to desired size. If the recipe calls for liquid as well, filter the liquid they were steeped in (it may contain grit) and use it for a more intense flavour.
